Recipe for Accompanying Dish

RECIPE FOR PIKE-PERCH WITH BEURRE BLANC

Here’s a simple and delicious recipe for preparing pike-perch with beurre blanc:

Ingredients :

– 4 pike-perch fillets
– Salt and pepper, to taste
– 2 shallots, finely chopped
– 150 ml dry white wine
– 50 ml white vinegar
– 150 g butter, cut into small pieces
– Lemon juice, to taste
– Fresh parsley, chopped (for garnish)

Instructions :

1. Season the pike-perch fillets with salt and pepper on both sides.

2. In a skillet, cook the pike-perch fillets over medium heat until they are golden on both sides and cooked through. This should take about 4-5 minutes per side, depending on the thickness of the fillets. Keep warm.

3. In a saucepan, sauté the shallots in a bit of butter until they are tender.

4. Add the white wine and white vinegar to the shallots. Let simmer until the liquid reduces by half.

5. Reduce the heat to low. Gradually add the butter, whisking constantly until the sauce is smooth and creamy. Season with salt, pepper, and lemon juice to taste.

6. Arrange the pike-perch fillets on serving plates and generously drizzle with beurre blanc sauce.

7. Sprinkle with chopped parsley for garnish.
